Need I say more.  These are just too delicious for words and so darn easy.  It is wonderfully simple.  Anything that taste this good and is only 4 ingredients is my kind of dish!  It’s the mother-load of potato recipes. And kids Love!!! Perfect side to chicken or beef.

Roasted Red Potatoes with Ranch, Cheese and Bacon
  • 2 pounds Red Potatoes- washed and quartered
  • ⅔ cup Ranch Dressing- yep good ol' Hidden Valley Ranch from a bottle
  • ⅔ cooked bacon crumbled (about 1 lb. of bacon)
  • ⅔ cup sharp cheddar cheese
  • salt and pepper to taste
  1. Preheat over to 350°
  2. Combine in large bowl the ranch dressing, cheese and bacon. Add the cut potatoes and add a dash of salt and pepper. Toss to coat all potatoes.
  3. Place in a greased 9 x 13 baking dish, or something similar. Cover with foil.
  4. Bake for 1 hour 15 minutes. Stir gently hallway though just to give all potatoes a chance to cook equally. No potato left behind!
  5. After 1 hour 15 minutes, remove foil. Raise temp of oven to 400° and stir potatoes again.
  6. Top with some additional cheese and cook for about 15 more minutes until bubbly.
