Chocolate Chip Banana Bread
  • 2 cups crushed ripe bananas (about 5 or 6)
  • 5 cups flour
  • 4 eggs
  • 1 tsp salt
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup Crisco shortening
  • 1 cup Chocolate chips (or chopped pecans)
  1. Mix shortening, sugar, eggs and bananas (I do all this in a mix master blender). Sift the flour and mix into the flour the baking soda and baking powder. Then add the flour mixture to the liquid mixture. After mixed well. I mix by hand the chocolate chips into the mix. Pour into 3 medium foil lined loaf pans and place in a cold oven. Set oven to 270°, bake 1 ½ hours or until firm to the touch.
  2. Extra yummy: after bread cools, glaze loaves with powdered sugar mixed with milk.
