Chocolate Chip Banana Bread
Oh boy… do you ever have a bunch of bananas that have gotten too ripe? And no one in the house will touch them.. Here’s a way to give them a new life! I always have a house full of girls.. and they devour this recipe!! If you like nuts instead of chocolate chips.. throw those in instead.. or heck throw both in!! We are just not that big fans of nuts in stuff in this household. We will eat nuts all day plain.. but not so crazy about them in stuff.. But I know a ton of you are.. so go nutty if you must!
- 2 cups crushed ripe bananas (about 5 or 6)
- 5 cups flour
- 4 eggs
- 1 tsp salt
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup Crisco shortening
- 1 cup Chocolate chips (or chopped pecans)
- Mix shortening, sugar, eggs and bananas (I do all this in a mix master blender). Sift the flour and mix into the flour the baking soda and baking powder. Then add the flour mixture to the liquid mixture. After mixed well. I mix by hand the chocolate chips into the mix. Pour into 3 medium foil lined loaf pans and place in a cold oven. Set oven to 270°, bake 1 ½ hours or until firm to the touch.
- Extra yummy: after bread cools, glaze loaves with powdered sugar mixed with milk.
