My mom is a heck of a cook.  Most of what I know about cooking came from watching and helping her in the kitchen.   Everyone that has ever eaten anything out of her kitchen can vouch for my praises.  I had boys in school get off the bus stop with me in front of my house knowing my mom would insist on feeding them.  Our house was about as close to a meat & 3 as you could get!   You never left our house hungry.  And she always had something in the cake dish.   This was a dessert she would whip up when the blueberries were in season.  And sometimes in the dead of winter she would pull a pint of berries out of the freezer.  It could be a brunch dish served as it is.  Or serve it with ice cream or whip cream for a dessert.  Here is a link to Amy Jane’s whip cream. http://www.amyjanecooks.com/amy-janes-whipped-cream/

If you go the whip cream route.   It’s easy and so very yummy.  You just can’t get enough of that crunch!

Blueberry Belle Crunch
  • 1st combination ( bottom)
  • 1 pint of blueberries
  • 2 Tbsp. Flour
  • ¼ tsp salt
  • ½ cup sugar
  • 2 Tbsp. lemon juice
  • mix all these ingredients together
  • 2nd combination (top)
  • 1 cup flour
  • 1 cup quick oatmeal
  • ½ cup brown sugar
  • ½ tsp salt
  • ½ tsp vanilla
  1. Mix all these ingredients together
  2. Spread combination 1 in a greased 9” pie pan.
  3. Cut ½ cup butter into combination 2. Sprinkle combination 2 over combination 1.
  4. Bake at 350º 30-40 minutes.
